Jayden Mitchell joined the Upper Iowa coaching staff for the 2025 season as a part-time assistant coach after playing running back for the Peacocks. He will serve as a graduate assistant coach during the 2026 season. During his playing career, Mitchell competed in 22 games and ran for 1,265 yards. 

 In 2024, Mitchell rushed for a team-high 803 yards on 147 carries while recording a team-high eight rushing touchdowns. During the 2023 campaign, he rushed for 462 yards and six touchdowns on 92 carries.
